Stuffed Jalapenos with Cream Cheese & Bacon

Ingredients

  • 1 package bacon, diced.
  • 2 packages Cream Cheese
  • 24 Jalapeno peppers, halved and de-seeded.
  • 1/2 cup Parmesan Cheese
  • 1 cup flour
  • 2 Cups Panko Bread crumbs
  • 4 eggs, beaten

Directions

  1. Cook bacon over medium heat in a non-stick skillet until crisp. In a mixing bowl, combine the cream cheese and the cooled off crumbled bacon.

  2. Preheat the oven to 400 degrees.

  3. Halve the Jalapeno peppers and remove seeds and ribs.

  4. In a small mixing bowl, beat the eggs. In another bowl, place the flour in it. In another bowl, place the Panko bread crumbs and Parmesan cheese and mix together.

  5. Stuff the cream cheese and bacon into the halved Jalapenos. Once you are done stuffing the all the halves, that is when you will lightly dust them with flour, then dip in the egg, then into the Panko-Parmesan mixture.

  6. Arrange the breaded Jalapenos onto the cookie sheet. Bake in the 400 degree oven for 30 minutes or until the bread crumbs are lightly browned.
