Sweet Potato Waffles

Ingredients

  • 1 cup mashed cooked sweet potatoes
  • 1 1/4 cup lowfat buttermilk
  • 1 egg
  • 1 tablespoon canola oil
  • 2 cups lowfat pancake mix
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon
  • Powdered sugar (optional)

Directions

  1. Preheat waffle iron according to manufacturer’s directions.

  2. In medium bowl combine sweet potatoes, buttermilk, egg and oil.

  3. In separate bowl, whisk pancake mix, sugar and cinnamon.

  4. Stir sweet potato mixture into dry ingredients. Batter will be fairly thick.

  5. Coat waffle iron with nonstick cooking spray.

  6. Spoon 1/2 to 3/4 cup batter into waffle iron; close and cook until crisp.

  7. Sprinkle with powdered sugar, if desired.
