Broccoli Cashew Salad

Ingredients

  • 1 head broccoli, stems discarded, florets chopped small
  • 1 cup mayo
  • 3 tbsp. red wine vinegar
  • 1/2 cup raisins
  • 1 cup sunflower seeds
  • 1/2 cup sugar
  • 1/2 red onion, minced
  • 1 pack ramen noodles
  • 1 cup raw cashews

Directions

  1. Place the broccoli in a large bowl.

  2. In a medium bowl, whisk the mayo, sugar, vinegar and onion.

  3. pour the dressing over the broccoli.

  4. Add in the raisins, crumbled ramen noodles, sunflower seeds, and cashews.

  5. Toss to combine.
