Creamy custard sauce

Ingredients

  • 3 egg yolks slightly beaten
  • 3 to 4 tablespoons sugar
  • 1 cup milk
  • 1/2 teaspoon vanilla
  • 2 to 3 cups assorted fresh fruit
  • dash of salt

Directions

  1. Mix egg yolks, sugar and salt in heavy 2 quart saucepan.

  2. Stir in milk gradually.

  3. Cook over low heat, stirring constantly until mixture coats a metal spoon, 5 to 20 minutes (do not boil- it will thicken as it cools).

  4. Remove sauce from heat, stir in vanilla.

  5. Place saucepan in cold water until sauce is cool.

  6. Cover and refrigerated at least 2 hours but no longer than 24 hours.

  7. Serve over fruit.

  8. Garnish with fresh mint leaves.
