Dark Peppermint or Dark Orange Chocolate Brownies

Easy to make, moist dark brownie.
Texture improves the following day.

Serves 20 people

Ingredients

  • 200 g butter
  • 100 g cocoa powder
  • 2 C caster sugar
  • 1 t vanilla essence
  • 4 eggs, lightly beaten
  • 100 g flour
  • 1 t baking powder
  • 10 x Whittaker's 50% Dark Peppermint Mini slabs, chopped or 200 g Whittaker's 50% Dark Orange chocolate, chopped
  • Icing sugar to dust

Directions

  1. Melt butter and cocoa, over low heat.

  2. Add sugar and stir.

  3. Cool, then add vanilla essence.

  4. Mix in eggs, flour, baking powder and chocolate chunks.

  5. Bake in paper lined 20cm square cake pan at 180oC for 20 minutes.

  6. Cool, then dust with Icing sugar.

  7. Cut into squares to serve.
