Easy Caramel Popcorn

Ingredients

  • *3 quarts popped corn
  • *3 cups mixed nuts
  • *1 cup brown sugar
  • *1/2 cup Karo corn syrup
  • *1/2 cup margarine
  • *1/2 teaspoon salt
  • *1/2 teaspoon vanilla
  • *1/2 teaspoon baking soda

Directions

  1. In large shallow roasting pan combine popped popcorn and nuts. Put in 250 degree oven while making glaze. In heavy two quart saucepan stir sugar, corn syrup, margarine and salt. Boil over medium heat without stirring for five minutes. Remove from heat. Stir in vanilla and baking soda. Pour over warm popcorn mix and stir to coat. Bake at 250 degrees for one hour, stirring occasionally. Cool. Break apart. Store in tightly covered container.
