Peanut Sauce

Ingredients

  • 21/2 c Coconut milk
  • 1/3 c red/green curry paste
  • 3/4 c ground peanuts
  • 1/4 palm sugar
  • 2 tbsp. tamarind liquid
  • 1 tbsp. veg stock
  • 3tbsp light soy sauce

Directions

  1. Combine cocnut milk and curry paste in a pan and boil over medium heat.

  2. Cook for 3-5min or until fragnant

  3. Add remaining coconut milk, peanuts,soy sauce,tamarind liquid,palm sugar and veg. stock

  4. Cook stirring constantly for 3-5 min until peanuts dissolve.

  5. Make sure Peanuts don’t burn at the bttom of the pan.

  6. season with salt and Serve with veg satay dishes.
