Quinoa Salad with Dried Cranberries and Avocado

Ingredients
- Salad:
- 1 cup raw quinoa
- 1 (11oz) can Mandarin Oranges
- 1/3 cup diced red,yellow, or orange bell pepper
- 1/3 cup dried cranberries
- 1/2 cup diced red onion
- 1 avocado, diced
- 2/3 cup chopped pecans
- Dressing:
- 3 tbsp vegetable oil
- 3 tbsp white wine vinegar
- 2 tbsp juice from Mandarin orange can
- 2 tsp Dijon mustard
- 2 tsp fresh lemon juice
- 1/2 tsp sea salt
- 1/2 tsp freshly ground pepper

Quinoa Cooking Instructions: Rinse 1 cup quinoa under cold water until it runs clear. Place quinoa and 1 1/2 cups stock or water in a medium saucepan. Bring to a boil, reduce to a simmer, cover and cook until liquid is absorbed, about 15 minutes. Fluff with a fork.

While quinoa is cooking, put all salad ingredients in a bowl. Add quinoa last. Mix dressing together and add to salad. Toss
