Paleo Kale Soup

Ingredients
- 1 T. olive oil
- 2-3 lg. leeks, chopped, white and light green parts only (350g)
- 1 c. onion, choppped (160g)
- 12 oz. extra lean ground beef (4 oz.=130 cal)
- kale, chopped (160g)
- 1 32 oz. can petite diced tomatoes
- 6c. chicken broth
- salt and pepper
Directions

In a large stockpot, heat oil over med. high heat.

Add leeks and onions, saute until soft.

Add garlic, saute 1-3 more minutes.

Add meat, stirring until brown.

Add kale, tomatoes, broth, salt, and pepper.

Simmer on low 30 minutes.
