Pineapple Squares

Ingredients

  • 2 1/2 c crushed graham wafers (separated into 2 1/4 and 1/4)
  • 3/4 c butter (separated into 1/4 and 1/2)
  • 1 1/2 c icing sugar
  • 2 eggs
  • large can unsweetened crushed pineapple
  • 2 c whipping cream with 1/2 c sugar (or Dream Whip)

Directions

  1. Mix 2 1/4 c graham wafers and 1/4 c butter and place in greased pan. Bake 15 mins in slow oven. Cool.

  2. Mix 1/2 c butter,add icing sugar and eggs. Beat until light and creamy. Spread over cooled graham wafer layer.

  3. Drain pineapple. Beat whipping cream and sugar (or Dream Whip) and fold in pineapple.

  4. Place on top of icing sugar mixture. Sprinkle remaining graham wafer crumbs on top. Chill for several hours.
