Ingredients
- 2 tsp. of canola oil
- 2 - cloves garlic, crushed
- 1 - medium onion, chopped
- 1 tsp - mild Currey powder
- 2 - large sweet potatoes, peeled and chopped
- 2- cups water
- 1 - vegetable stock cube, crumbled
- 1 3/4 - cup Soy beverage
Directions

Heat oil in a large saucepan. Saute garlic, onion and curry powder until soft. Add sweet potato, water and vegetable stock cube. Simmer covered for f15 minutes or until vegetables are tender. Cool.

Blend or precess sweet potato mixture until smooth. Gradually add So Good soy beverage – blending until well combined.

Return to saucepan and heat through. So not boil. Season with salt and pepper to taste. Serve with crusty bread.
