Blueberry Ginger Spelt Muffins

Ingredients
- 1 1/2 c spelt flour
- 1/2 c sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 2 tsp ground ginger
- 1/4 tsp ground allspice
- 1/4 tsp cinnamon
- 1/2 c soy yogurt
- 1 c almond milk
- 1/3 c canola oil
- 1 tsp vanilla extract
- 1/2 c crystallized ginger (chopped up)
- 1 1/4 c blueberries (fresh or frozen work)
Directions

1 Pre-heat the oven to 375°. Grease a muffin tin.

2 Mix flour, sugar, baking powder, salt and spices. Make a well in the center and add the yogurt, milk, canola oil and vanilla.

3 Stir well to combine. Fold in ginger and blueberries. Spoon into muffin tin til’ just about full. Bake 28-32 minutes.
