Blueberry Ginger Spelt Muffins

Ingredients

  • 1 1/2 c spelt flour
  • 1/2 c sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground ginger
  • 1/4 tsp ground allspice
  • 1/4 tsp cinnamon
  • 1/2 c soy yogurt
  • 1 c almond milk
  • 1/3 c canola oil
  • 1 tsp vanilla extract
  • 1/2 c crystallized ginger (chopped up)
  • 1 1/4 c blueberries (fresh or frozen work)

Directions

  1. 1 Pre-heat the oven to 375°. Grease a muffin tin.

  2. 2 Mix flour, sugar, baking powder, salt and spices. Make a well in the center and add the yogurt, milk, canola oil and vanilla.

  3. 3 Stir well to combine. Fold in ginger and blueberries. Spoon into muffin tin til’ just about full. Bake 28-32 minutes.
