Ingredients
- 1/2 c olive oil
- 1/3 c lime juice
- 1/3 c finely chopped onion
- 3 tbs minced fresh cilantro
- 3 tbs white vinegar
- 3 tbs minced fresh parsley
- 2 tbs finely chopped seeded jalapeno pepper
- 1 1/2 tsp minced garlic
- 1 tsp salt
- 1/4 tsp pepper
- 6 c torn romaine
- 1/2 lb cooked small shrimp
- 1 medium ripe avocado, peeled and sliced
Directions

In a jar with a tight-fitting lid, combine the first 10 ingredients; shake well. Divide the romaine among four salad plates; top romaine with shrimp and sliced avocado. Drizzle with dressing.
