Moist and Nutty Carrot Loaf

Ingredients

  • 3 tsp. baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 3 c all-purpose flour
  • 3 carrots
  • 1 (15 oz) can crushed pineapple
  • 1 1/2 c vegetable oil
  • 2 c white sugar
  • 6 eggs
  • 1 c chopped walnuts
  • 1 1/2 c raisins

Directions

  1. Preheat oven to 375 degrees F. Grease and flour two 9×5 inch loaf pans.

  2. Sift together baking soda, salt spices, and flour.

  3. In a large bowl, combine ground carrots, pineapple, oil and sugar. Mix in eggs. Blend flour mixture into carrot mixture. Mix well. Fold nuts and raisins into batter. Pour into prepared pans.

  4. Bake at 375 degrees F. for 45 minutes, or until toothpick comes out clean.
