Mexican Peanut Brittle

Serves 5 people

Ingredients
- 2 chipotle peppers, finely chopped into paste
- 2 tbsp of adobo sauce from peppers
- 2 tbsp ketchup
- 2 tbsp lime juice
- Salt to taste
- 1/2 cup brown sugar
- 1 1/2 to 2 cups of skinless peanuts, dry roasted or regular
Directions

Heat oven to 350 degrees

Prepare glaze:

In sauce pan over medium heat , dissolve brown sugar until a caramel color, remove from heat

Add

Adobo sauce, peppers, ketchup, lime juice, and salt

Combine thoroughly into a glaze

Add peanuts to glaze and mix

Remove mixture to a simplat lined cookie sheet

Spreading mixture to desired thickness

Bake for 30 minutes

Remove from oven and let thoroughly cool

break into chunks

NOTE: substitue hazel nuts, or pistachios or toasted pumpkin seeds, as alternatives
