Pumpkin Pie Squares

Ingredients
- 3/4 c all-purpose flour
- 1/2 c rolled oats
- 1/4 c packed brown sugar
- 1/2 c butter
- 1/2 c chopped pecans
- 1 can (14 oz) pumpkin
- 1 can Eagle Brand
- 2 eggs, beaten
- 1 tsp each, ginger and cinnamon
- 1/2 c coconut (optional)
Directions

Combine flour, oats and brown sugar; cut in butter until crumbly; stir in pecans.

Press evenly into 9inch square pan. Bake at 350 degrees F for 15 minutes.

Combine remaining ingredients, except coconut. Pour over base in pan; sprinkle with coconut.

Return to oven and bake 25 to 30 minutes or until set.

Serve warm or chilled. Garnish with whipped cream and toasted coconut, if desired.
