Wholemeal Ginger Slice

‘Healthy’ version (?) of recipe similar to Ginger Crunch – yummy!

Ingredients
- Base:
- 225 g butter, melted
- 1/2 C golden syrup
- 1 C soft brown sugar
- 1 C shredded coconut
- 1 C rolled oats
- 1/2 C sesame seeds
- 1 1/2 C wholemeal flour
- 1 T ground cinnamon
- 1 T ground ginger
- Topping:
- 100 g butter
- 3 T golden syrup
- 1 1/2 C icing sugar
- 1 t ground ginger
- 1/2 C chopped pistachios (optional)
- 1/4 C finely chopped crystallised ginger (optional)
Directions

Base:

Melt butter and golden syrup together, then add to remaining ingredients.

Mix well (quite sticky and soft mixture).

Press into lined 32 × 22cm shallow baking tray.

Bake at 160oC approx 25 mins, until golden brown.

Topping:

Melt butter & golden syrup, add icing sugar & ground ginger.

Cook slowly on medium heat 8 mins, stirring.

Beat well until mixture is light fluffy golden brown.

Do not overheat, as it will set like toffee.

Pour mixture over base, and sprinkle with pistachios & ginger if desired.

When cold, slice into fingers.
