Ingredients
- 3/4 cup Quick cooking oats
- 3/4 cup warm apple juice
- 2 Tbsp oil
- 2 large egg whites
- 2 tsp vanilla
- 1 Tbsp margarine, melted
- 1 cup brown sugar, packed
- 1 large Granny Smith apple
- 1 1/4 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/4 tsp nutmeg
Directions

Combine oats, apple juice and oil, let stand 10 minutes

Stir in egg whites and vanilla

Pour melted margarine in bottom of 9 X 9 pan coated with cooking spray

Sprinkle ¼ cup brown sugar in pan

Combine remaining brown sugar, flour, baking soda, cinnamon, salt and nutmeg in bowl

Add oat mixture and stir until moist

Pour into pan

Bake 40 minutes at 350°

Cool in pan for 10 minutes

Invert cake onto plate
