Chicken Capri

Ingredients

  • 1 cup reduced-fat ricotta
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 4 boneless, skinless chicken breast halves
  • 1/2 tsp garlic powder
  • 2 tbsp extra virgin olive oil
  • 1 cup crushed tomatoes
  • 4 slices reduced-fat mozzarella

Directions

  1. Combine the ricotta with oregano, salt and pepper.

  2. Rub the chicken with garlic powder.

  3. Heat the oil in a large skillet over medium-high heat.

  4. Add the chicken and cook for 12 minutes per side.

  5. Place the chicken in a large baking dish and allow to cool.

  6. eat oven to 350.

  7. Spoon 1/4 of the cheese mixture and 1/4 cup tomatoes onto each chicken breast half, then top each with a slice of mozzarella.

  8. Bake for 20 minutes.
