Rhubarb Custard Pie

Ingredients

  • Uncooked pie crust
  • 3 cups cut rhubarb
  • 2 eggs, beaten
  • 2 tablespoons whole milk
  • 1 1/2 cups sugar
  • 3 tablespoons flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 tablespoon flour

Directions

  1. Line pie pan with crust.

  2. Place rhubarb in bowl.

  3. in separate bowl combine eggs, milk, sugar flour, salt, and nutmeg.

  4. Add to rhubarb.

  5. Pour into pie shell.

  6. Bake at 400 degrees for 50 to 60 minutes.
