Cheesecake

Ingredients

  • 14 graham crackers
  • 6 tablespoons butter
  • 3 cups cream cheese
  • 3/4 cup sugar
  • 3 eggs
  • 3 drop vanilla
  • 1 lemon
  • Fruit topping

Directions

  1. Preheat oveen to 300 degrees.

  2. Grease 9 inch springform pan.

  3. Crush graham crackers into fine crumbs.

  4. Melt butter and combine with crumbs.

  5. Press crumbs into pan.

  6. Refrigerate to harden.

  7. Grate lemon to make zest and combine thoroughly with cream cheese, sugar, eggs, vanilla, and a good squeeze of lemon juice.

  8. Pour filling into pan.

  9. Bake for 35 to 40 minutes.

  10. Turn off oven and leave cheesecake to cool.

  11. Once firm, chill for 2 hours in fridge.

  12. Decorate with fruit or whipped cream.
