Emily’s Chicken Noodle Soup

Serves 8 people

Ingredients

  • 2 chicken breasts
  • 2/3 cup chopped celery
  • 2/3 cup chopped carrots
  • 1/3 cup chopped onion
  • 8 cups chicken broth
  • 1 tablespoon italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1/2 teaspoon parsley
  • 1/2 tablespoon lemon pepper
  • Salt and Pepper to taste
  • 2 cups dry noodles

Directions

  1. Cut chicken breasts into bite size pieces.

  2. Cook chicken in pan with olive oil.

  3. Meanwhile in pot put 1 cup of broth and vegetables.

  4. Cook until vegetables are tender.

  5. Add remaining broth and seasonings.

  6. Add chicken.

  7. Bring to a boil for 10 minutes.

  8. Add noodles.

  9. Cook until noodles are done.

  10. Reduce heat to low.

  11. Serve with bread and salad.
