Texas Jambalaya

Ingredients

  • 3lbs boneless chicken
  • 3lbs of sausage
  • 8 cups of rice
  • 16 cups of broth or water
  • 3 tbsps minced garlic
  • 4 large onions
  • 2 pks of green onions
  • salt to taste
  • creole seasoning

Directions

  1. Boil chicken. While chicken is cooking chop onions & green onions. Slice & brown sausage. Remove sausage from pan, put onions, green onions & minced garlic in same pan or pot. Brown for about 45 mins, add water & stir occasionally. Onions should be dark brown when done. Mix chicken broth with water to make 16 cups, pour in pan with onions, add chicken & sausage, then season to taste with salt & creole seasoning. Bring to full boil , then simmer for 45 mins. Add rice, mix & bring to full boil. Let simmer for about 30 mins. or until rice is done. This is enough for about 40 -50 people , just cut in half if you want a smaller one.
