Ingredients
- 8 flour tortillas, cut into thick strips
- Cooking spray
- 1 package fajita seasoning mix
- 1 1/2 pounds cooked boneless, skinless chicken breasts, sirloin steak or large shrimp, peeled and deveined
- 1 (15 oz) can tomato sauce
- 1 (16 oz) can refried beans
- 1 red bell pepper, seeded and thinly sliced
- 1 green bell pepper, seeded and thinly sliced
- 2 onions, thinly sliced
- 1/4 cup chopped cilantro or flat-leaf parsley
- 2 cup shredded Mexican Blend cheese
- Sour cream, to garnish
- Salsa, to garnish
- Guacamole, to garnish
Directions

Heat oven to 375°F.

Spray 13×9-inch baking dish with cooking spray.

In medium bowl, mix refried beans, tomato sauce and fajita seasoning mix. Stir in meat.

Arrange ½ of tortillas strips over bottom of baking dish, overlapping if necessary, in baking dish.

Top with half of bean mixture, half of the vegetables and 1 cup of the cheese.

Repeat layers with remaining tortillas, bean mixture, vegetables and cheese.

Cover baking dish with foil.

Bake 30 minutes.

Uncover; bake 15 to 20 minutes longer or until hot and bubbly.

Let stand 5 minutes before cutting.

Garnish with sour cream, salsa and guacamole.
