Apple Bran Muffins

Ingredients

  • 1 1/2 cups wheat bran
  • 1 cup low fat buttermilk
  • 1 cup flour
  • 1/4 cup dark molasses
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 3/4 tsp ginger
  • 1 tbsp wheat germ (optional)
  • 1 tbsp ground flax seed (optional)
  • 1 large apple grated
  • 2 egg whites

Directions

  1. In bowl combine bran and buttermilk and set asside. Combine all other ingredients and fold into bran and butermilk.

  2. Bake at 350* for 18 minutes.
