Ingredients
- 1/3 cup macadamia nuts, chopped
- 1/3 cup sweetened coconut flakes
- 1/3 cup panko breadcrumbs
- 2 tbsp. light brown sugar
- 2 tbsp. butter, melted
- 4 each 5-6 ounce salmon fillets
- Salt and pepper, to taste
- Nonstick cooking spray
Directions

Preheat the oven to 400 degrees.

Spray a 9×13 baking dish with nonstick cooking spray.

Lay the salmon fillets in the dish in a single layer.

Mix the macadamia nuts, sweetened coconut flakes, panko breadcrumbs, brown sugar, and melted butter in a small bowl. Combine well.

Sprinkle salt and pepper over the salmon fillets. Divide the macadamia coconut mixture into four equal portions.

Coat each salmon fillet evenly with the macadamia coconut breading mixture.

Place the fillets on the middle oven rack and bake for 15 to 20 minutes.

Fish is done when it flakes easily with a fork. Remember that fish will continue to cook for about 5 minutes once it is taken of the heat. To ensure that your salmon is not dry, check for doneness periodically beginning a few minutes before the estimated finish time.

Variation: You may also top the salmon filets with a spicy pineapple glaze made with ½ cup sweet chili sauce, 8 ounces crushed pineapple in pineapple juice and 1 tsp. Cajun seasoning.
