Chipotle-Honey-Glazed Pork Tenderloin

Flavorful pork tenderloin recipe with a sweet-and-spicy glaze. Complete the meal with sweet potatoes and green beans.

Ingredients
- 3 tablespoon(s) extra-virgin olive oil
- 1 1/4 pound(s) pork tenderloin
- 3 tablespoon(s) honey
- 1 tablespoon(s) chopped chipotle chiles in adobo
- 1 clove(s) garlic, crushed with press
- 1 1/2 pound(s) green beans, trimmed
- 4 large (1 1/2 pounds) sweet potatoes
- 1/4 cup(s) nonfat plain Greek yogurt
- 1 tablespoon(s) orange juice
Directions
- Preheat oven to 450 degrees F. In 12-inch skillet on medium-high, heat 2 tablespoons olive oil. Sprinkle pork all over with 1/2 teaspoon salt. Add pork to skillet; cook 6 minutes or until browned on all sides, turning occasionally.
- Transfer pork to 13- by 9-inch baking dish. In small bowl, mix 1 1/2 teaspoons olive oil, honey, chipotles, and garlic; brush pork with half of glaze and roast 5 minutes.
- While pork roasts, toss green beans with remaining 1 1/2 teaspoons olive oil. Remove baking dish from oven; push pork (and any browned bits) to one side and brush with remaining glaze. Add green beans to other side of dish and roast 15 minutes longer.
- Meanwhile, with fork, pierce sweet potatoes. Transfer to paper-towel–lined microwave-safe plate and microwave on high 10 min. Holding potatoes with dishtowel, scrape flesh into medium bowl. Add yogurt and orange juice; mash until almost smooth.
- Slice pork; serve with pan drippings, beans, and potatoes.
