Eggs in Baskets

Serves 2 people

Ingredients

  • 4 slices whole wheat bread, crusts removed
  • 1 tbsp melted butter or margarine
  • 4 eggs
  • salt and pepper
  • 1/2 cup shredded Cheddar
  • 1 small tomato, diced
  • 1/4 cup ham, diced

Directions

  1. eheat oven to 400.

  2. Roll each bread slice with a rolling pin to flatten.

  3. Lightly brush with melted butter.

  4. Press into prepared baking cups.

  5. Break 1 egg into each cup.

  6. Season lightly with salt and pepper.

  7. Bake for 10 minutes, then sprinkle cheese, tomato and ham on each egg.

  8. Bake for 5 minutes more or until egg whites are set and bread is toasted.
