Eggs in Baskets

Cook time: 15 minutes
Serves 2 people
Ingredients
- 4 slices whole wheat bread, crusts removed
- 1 tbsp melted butter or margarine
- 4 eggs
- salt and pepper
- 1/2 cup shredded Cheddar
- 1 small tomato, diced
- 1/4 cup ham, diced
Directions

eheat oven to 400.

Roll each bread slice with a rolling pin to flatten.

Lightly brush with melted butter.

Press into prepared baking cups.

Break 1 egg into each cup.

Season lightly with salt and pepper.

Bake for 10 minutes, then sprinkle cheese, tomato and ham on each egg.

Bake for 5 minutes more or until egg whites are set and bread is toasted.
