Southwestern Skillet Turkey

Ingredients
- 4 tsp extra-virgin olive oil
- 1 pound turkey breast cutlets, cut into strips
- 1 tsp ground cumin
- 1/4 tsp cayenne
- 1 small jicama, peeled and julienned
- 1 sweet onion, finely chopped
- 2 cups cherry tomatoes, halved
- 1/3 cup fresh cilantro, chopped
Directions

In a large, nonstick skillet, heat the oil over medium-high heat.

Add the trukey and sprinkle with cumin and cayenne; cook, stirring, for 30 seconds.

Stir in the jicama and onion; cover and cook for 3 minutes.

Stir in the cherry tomatoes, cover, and cook for 2 minutes longer.

Uncover, stir, and cook for another 2 minutes.

Stir in the cilantro.
