Hobo Stew-Crockpot

NOT good if prepped and left in fridge

Ingredients

  • 1 Lb Frozen meatballs
  • 4 Med Potatoes (chunks)
  • 4 Med Carrots (chunks)
  • 1 Large Onion (chunks)
  • 1/2 Cup Ketchup
  • 1/2 Cup Water
  • 1 1/2 tsp Cider, red or white vinegar
  • 1/2 tsp dried basil
  • 1 Cup frozen peas
  • 2 Cups hot cooked rice (optional)

Directions

  1. Place potatoes, carrots,and onions in large crock pot

  2. Top with meatballs

  3. Mix remaining ingredients and pour over meatballs

  4. Cover and cook on low for 8 hours

  5. Add peas the last 15 minutes of cooking time

  6. Serve over rice if desired
