Cabbage and Noodles

Ingredients
- One medium onion (about 2 cups thinly sliced)
- 1/4 cup unsalted butter
- 1 1/2 tablespoons paprika
- One head cabbage (about 8 cups shredded)
- 2 teaspoons salt
- 12 ounces medium-wide egg noodles
- Freshly ground black pepper
- sour cream
Directions

Heat a heavy pot with a tight lid to medium heat.

Put the butter and onions in and cook for about 15 minutes, until golden and soft.

Add the paprika and saute for a few seconds.

Stir in the cabbage and the salt, and continue to cook and stir occasionally for 5 more minutes.

Cover tightly and lower the heat to very low.

Cook at very low heat for 40 to 60 minutes, stirring occasionally, until the cabbage is very soft and brown.

When the cabbage is done, cook the noodles in boiling water, drain, and toss with the cabbage.

Add a generous amount of black pepper and if you like, top with a dollop of sour cream.
