Re-fried Beans #2

(from wood3875’s recipe box)

1lb of uncooked beans is 2.5 cups

Prep time: 120 minutes
Cook time: 60 minutes
Serves 8 people

Ingredients

  • 2 Tbsp Olive Oil
  • 1 1/2 Med Yellow Onion
  • 1 Tsp Salt
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Salt
  • 1/4 Tsp Black Pepper
  • 1 Tsp Prepared Garlic
  • Tap Water
  • 6 Cups of overnight soaked washed rinsed Pinto Beans

Directions

  1. Soak Beans, wash, rinse.

  2. Dice Onions, saute in the pressure cooker with all the oil, garlic and pepper.

  3. Add beans, cover with water (just barely), and then top off with water to cover by 3/4" to 1" of water.

  4. Add all other seasonings and stir as you bring to a boil.

  5. Place lid on pressure cooker and seal. Once you have pressure and the top is rockin’, reduce heat to maintain pressure (I use #4 on electric range – medium) and simmer for exactly 40 minutes.

  6. At the end of 40 minutes, turn off stove and leave the pot to settle and eventually release.

  7. Open pot – do not drain – do not add water – mash, mash, mash. Let cool and taste/serve.
