Chicken Skewers with Peanut Sauce

Ingredients

  • Bamboo skewers
  • 2 lb. skinless, boneless chicken breast, cut into 1 in. strips
  • 1 tsp salt
  • 1 tsp sugar
  • 1 cup coconut milk
  • 1/2 cup crunchy peanut butter
  • 2 tbsp soy sauce
  • 1 tsp white sugar
  • 2 drops hot pepper sauce
  • 1 clove garlic, minced
  • 1/2 cup water

Directions

  1. Soak bamboo skewers in water for 30 min.

  2. Sprinkle chicken with salt and sugar.

  3. Put chicken into a resealable plastic bag

  4. Add the coconut milk and marinate for 30 min in the fridge.

  5. Remove excess coconut milk and thread chicken onto skewers.

  6. Grill on BBQ or on the stove in a grill pan until cooked through, about 10 min.

  7. In a small bowl, mix peanut butter, soy sauce, sugar, hot pepper sauce, and garlic.

  8. Gradually stir in 1/2 cup water until the sauce is smooth.

  9. Warm sauce before serving.
