Homemade Enchilada Sauce

Ingredients
- 1 tablespoon vegetable oil
- 1 cup diced green onions (green parts only)
- 3 garlic cloves, crushed but left whole
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- 3 tablespoons all-purpose flour
- 1 tablespoon chipotle chili powder (though can use just regular chili powder also)
- 1.5 tablespoons regular chili powder 4 1/2 cups chicken broth
- 1/2 (1 ounce) square semisweet chocolate (I used dark chocolate and it worked too)
Directions

Heat oil in a large saucepan over medium-high high heat. Saute onions until tender. Stir in garlic cloves, oregano, cumin and cinnamon; saute for a few minutes. Fish out garlic cloves and discard.

Add a small amount of chicken broth (to keep chili powder from clouding in air!).

Stir in flour and chili powder, stirring until sauce thickens. Slowly whisk in remaining chicken broth; reduce until sauce reaches desired consistency.

Stir in chocolate until melted and well blended.
