Ingredients
- Ripe plantains
- 1 cup brown sugar
- 1 tsp grated lemon rind
- 1 1/2 cups boiling water
- 1 tbsp. butter
- 1 1/2 tbsp. corn starch
- 3 tbsp. lemon juice
- 1/4 rum ( can use more)
Directions

Combine sugar, lemon rind and boiling water

Add butter

Heat to boil

Mix cornstarch with lemln juice and add to mixture

Cook 8 mins until it thickens

Remove from heat and add rum and salt

Add cooked (boiled or steamed plantains) to mixture and put on heat for 5 mins to absorb some of the mixture. Leave for 5 hours and then warm and serve
