Ingredients

  • 1 small potato, red or gold (approx. 120 grams)
  • 1 large egg
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Directions

  1. Preheat oven to 425 degrees F.

  2. Chop potato into bite-size pieces, coat in olive oil and top with salt.

  3. Place in 7 oz. ramekin or similar small baking dish.

  4. Bake for approximately 30 minutes or until potatoes are roasted.

  5. Remove and crack egg on top of potatoes, season with salt and pepper to taste, then place back in oven for another 5 to 10 minutes until white is set.
