Make Ahead Mashed Potatoes

Ingredients

  • 8-10 potatoes, peeled
  • 8 oz softened cream cheese
  • 1 c sour cream
  • 2 tbps chopped chives
  • Salt & Pepper
  • 4 tbsp butter

Directions

  1. Quarter potatoes & put them in large pot w/ enough salted water to cover (1 tsp / qt)

  2. Boil for 10-15 minutes, until soft when speared in the center

  3. Drain well

  4. Whip hot potatoes, adding cream cheese & sour cream.

  5. Continue beating until fluffy and smooth

  6. Add chives, salt & pepper to taste

  7. Place in buttered 9X13 baking dish, dot with butter

  8. Cover w/ foil & refrigerate (Potatoes can be frozen at this sage & thawed before baking)

  9. Preheat oven to 325’

  10. Bake covered w/ foil for 15 minutes. Continue baking, uncovered, 20 minutes until crusty on top

  11. Makes 8-10 servings
