Ingredients
- 8-10 potatoes, peeled
- 8 oz softened cream cheese
- 1 c sour cream
- 2 tbps chopped chives
- Salt & Pepper
- 4 tbsp butter
Directions

Quarter potatoes & put them in large pot w/ enough salted water to cover (1 tsp / qt)

Boil for 10-15 minutes, until soft when speared in the center

Drain well

Whip hot potatoes, adding cream cheese & sour cream.

Continue beating until fluffy and smooth

Add chives, salt & pepper to taste

Place in buttered 9X13 baking dish, dot with butter

Cover w/ foil & refrigerate (Potatoes can be frozen at this sage & thawed before baking)

Preheat oven to 325’

Bake covered w/ foil for 15 minutes. Continue baking, uncovered, 20 minutes until crusty on top
