Ingredients
- 6 cups chicken broth
- 1/2 c sliced onion
- 2 tsp grated ginger root
- 4 shitake mushrooms, sliced
- 1 c diced tofu
- 3 tbs fish sauce or soy sauce
- 2 tbs fresh lime juice
- 1 tsp Asian chili sauce
- 12 shrimp, shelled and deveined
- 2 eggs, beaten
- 1/4 cup chopped fresh coriander
Directions

Place broth, onion, gingerroot,and mushrooms in pot. Bring to boil and simmer for 5 minutes or until vegetables are tender-crisp. Add tofu and cook for 1 minutes. Stir in fish sauce, lime juice and chili sauce; simmer for 5 minutes. Add shrimp; bring to boil. Slowly stir in beaten eggs with fork. When eggs form threads, remove from heat and add coriander.
