Guacamole

Makes: 2 1/2 cups

Ingredients
- 2 large ripe avocados, mashed
- 2 medium tomatoes, finely chopped (about 1 1/2 cups)
- 1 medium onion, chopped (about 1/2 cup)
- 2 jalapeno chilies, seeded and finely chopped
- 1 clove garlic, finely chopped
- 2 tablespoons finely chopped fresh cilantro
- 1 tablespoon vegetable oil
- juice of 1/2 lime (about 2 tablespoons)
- 1/2 teaspoon salt
- dash of pepper
Directions

Mix all ingredients in glass or plastic bowl. Cover and refrigerate at least 1 hour. Serve with tortilla chips if desired.
