Guacamole

Makes: 2 1/2 cups

Ingredients

  • 2 large ripe avocados, mashed
  • 2 medium tomatoes, finely chopped (about 1 1/2 cups)
  • 1 medium onion, chopped (about 1/2 cup)
  • 2 jalapeno chilies, seeded and finely chopped
  • 1 clove garlic, finely chopped
  • 2 tablespoons finely chopped fresh cilantro
  • 1 tablespoon vegetable oil
  • juice of 1/2 lime (about 2 tablespoons)
  • 1/2 teaspoon salt
  • dash of pepper

Directions

  1. Mix all ingredients in glass or plastic bowl. Cover and refrigerate at least 1 hour. Serve with tortilla chips if desired.
