Light Mayonnaise

Ingredients

  • 5 ounces light silken tofu (about 1/2 cup)
  • 1/4 cup low fat buttermilk
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon dry mustard
  • pinch cayenne
  • 2 tablespoons olive oil

Directions

  1. In a blender or food processor, whirl the tofu, buttermilk, lemon juice, salt, mustard, and cayenne until very smooth, scraping the sides frequently, at least 1 minute. With the motor running, drizzle in the oil and process until smooth. Use immediately or cover and refrigerate for up to 1 week.
