Ingredients
- 1 1/2c red rice
- 2 1/2c water
- 1 pkt feta cheese
- 2 beetroot peeled and diced
- Herbs - flat leaf parsley, basil, mint, coriander
- 3 cloves garlic
- 1 red capsicum cut into chunks
- 1 red onion cut into chunks
- 1/2c pine nuts, roasted
- 1 lemon - juice
Directions

Cook rice by absorption – rice & water in saucepan, bring to boil and simmer about 25 min

roast beetroot til tender

add onion about 1/2 way through

roast pine nuts

fry capsicum with 3 cloves of garlic

Mix all ingredients together

Just before serving, add feta, lemon & lots of herbs

Season with lots of pepper & salt
