Chicken Salad with Grapes

Ingredients

  • 3 1/2 cups cooked chicken
  • 1 large stalk celery, thinly sliced
  • 1/2 to 3/4 cup maynnaise
  • Juice of 1 lemon
  • salt and freshly ground black pepper
  • Pinch of cumin or curry powder (optional)
  • 2 T. finely chopped fresh parsley or chives
  • 1 1/4 cups red or green grapes or a combinations, cut in half
  • 1 to 2 cups mixed greens

Directions

  1. In a lare bowl, toss the chicken and celery. Gently fold in about 1/4 cup of the mayonnaise and the lemon juice. Add the salt, pepper, cumin or curry powder if desired, and parsley. Add more mayonnaise if you like a moister salad. Gently fold in the grapes.

  2. Place the salad on a bed of mixed greens or use to make sandwiches.
