Copper Pennies/Marinated Carrots

Ingredients

  • 2 lbs (5 Cups) carrots cut in 1/4 rounds
  • 1-2 med. onions, sliced & separated
  • 1 green pepper, cut into strips
  • 1 can tomato soup
  • 3/4 C. vinegar
  • 2/3 C. sugar
  • 1/2 C. oil
  • 1 tsp salt
  • 1 T Worestershire sauce

Directions

  1. Cook carrots in sm. amt salt water until tender

  2. Drain carrots

  3. Combine soup, vinegar, sugar, oil, Worcestershire sauce, onions, peppers

  4. Pour over carrots and marinate 12 or + hours

  5. Marinade also makes an excellent salad dressing
