Stuffed Zucchini

Ingredients

  • 6 medium whole zucchini, scrubbed and trimmed
  • 2 cups peeled chopped, fresh tomatoes
  • 1 cup bread cubes, cooked in butter until crisp
  • salt and pepper to taste
  • grated parmesan cheese

Directions

  1. Simmer [or microwave] the zuchhini in a little water until barely tender (8 to 10 minutes)

  2. Drain, and when cool, cut in half lengthwise

  3. Scoop out the seeds from each half and invert the halves on paper towels to drain

  4. Arrange the zucchini, cut side up, in a baking dish and fill the cavities with the chopped tomatoes and croutons

  5. [When making the croutons, add some garlic powder and herbs to the butter; or use store-bought croutons to save time]

  6. Sprinkle with salt and paper and cheese

  7. Bake at 400 about 30 minuts until tneder and lightly browned
