Parmesan Chicken w/ Balsamic Butter Sauce

Ingredients

  • Boneless/Skinless chicken breasts
  • 1/4 cup EVOO
  • 1/4 cup parm. cheese
  • 2 tablespoons minced oregano
  • 2 garlic cloves, minced
  • salt & pepper
  • 1 cup chicken stock or broth
  • 1/2 cup balsamic vinegar
  • 2 tablespoons butter

Directions

  1. Preheat oven to 400. In a large bowl, mix olive oil, parm, oregano & garlic, then coat chicken with that mixture. Arrange the chicken on a large rimmed baking sheet and season with salt & pepper. Bake for 45 minutes or until cooked through.

  2. While chicken is cooking, combine chicken stock/broth and vinegar and boil over high heat until reduced to 1/3 cup (about 10 minutes). Remove from the heat and whisk in the butter, 1 tablespoon at a time, until smooth. Season with salt & pepper. Transfer chicken to plates and spoon sauce on top. Serve.
