Mom’s Asparagus Casserole

As kids my sisters and I always looked forward to this on the holidays and we didn’t even like asparagus! So yummy!

Ingredients
- 1 Stick of butter or margarine
- 1 Tube of ritz cracker crumbs
- 4 tbs. of butter or margarine
- 1 and a half cups of milk
- Salt and pepper to taste (a little)
- 1 package of sharp cheddar cheese (10 oz.)
- 4 cans of asparagus spears drained
- 1/2 cup of sliced almonds (optional)
- 3 tbs. (ask mom for sure b/c recipe got smeared) of flour
Directions

Melt stick of butter and blend with cracker crumbs

Line bottom of shallow oblong (baking dish) 9×13 with half of cracker mixture

Arrange asparagus spears in even layer.

Make sauce with butter, flour, cheese, milk and salt and pepper.

Melt in a sauce pan slowly. Pour over asparagus.

Sprinkle almonds on top.

Top with other half of crumb mixture.

Bake 12 minutes at 450

*This can be prepared 2 or 3 days ahead of time.
