Delmonico Potatoes

can also boil potatoes in chicken stock or bullion

Ingredients

  • 2 pounds red or Yukon gold potatoes (about 4 or 5 large), don't peel
  • 4 ounces cheddar cheese, grated
  • 1/2 cup fresh grated Parmesan cheese
  • 1 clove garlic, minced
  • salt and pepper to taste
  • 1 1/2 cups half & half (or heavy cream)
  • 1/2 teaspoon paprika
  • 1/2 cup coarse bread crumbs

Directions

  1. Cube potatoes into 1-inch chunks and boil in salted water till tender. Drain, then toss in a large bowl with cheeses, garlic, salt & pepper, half & half, and paprika. Stir well, then place in a casserole dish and sprinkle with bread crumbs. Bake at 400 for 30-40 minutes until bubbly and lightly browned.
