Ingredients
- 2 bunches broccoli
- 2-4 skinless chicken breasts
- 1 tablespoon olive oil
- 3 tablespoons butter
- 3 tablespoons flour
- 3/4 cup chicken broth
- 1/2 cup milk or half and half
- 1/3 sherry wine or white wine
- 1 cup shredded cheddar cheese
- salt and pepper
- nutmeg

Preheat oven to 325

Put steamed broccoli in baking dish and add shredded chicken

In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes to eliminate the raw flour taste. Gradually whisk in chicken broth, wine and milk until incorporated. Bring to a boil and then reduce to a simmer until the sauce is the consistency you desire. Add a dash of nutmeg. Add 3/4 of the cheese blend and whisk until combined. Add salt and pepper to taste.

Pour sauce over broccoli and chicken, sprinkle with remaining cheese and bake 30-40 minutes covered except for the last 10 minutes.
