Ingredients
- 3 green onions, sliced
- 1 cup sliced mushrooms
- 1/2 cup ham cut into small pieces
- 1/2 -1 cup grated cheddar cheese
- other vegetables
- 2 tablespoons butter
- 4 beaten eggs
- 1/2 teaspoon salt
- pepper to taste
Directions

Melt butter in frying pan. Add vegetables and saute until just tender. Remove from pan. Add eggs and seasonings. When eggs are just starting to set, add meat and vegetables. Cook to desired degree of doneness. Add cheese, cover just until cheese melts. Serve while still hot.
