Hungarian Beef and Noodles

Ingredients
- 1 lb ground beef
- 1 md. onion, chopped
- 1 md. green bell pepper, chopped
- 1 clove garlic, minced
- 1 Tbsp paprika
- 1 tsp dried thyme
- 3 1/2 c. beef broth
- 4 c. medium egg noodles
- 1 (10 oz) pkg frozen peas and carrots
- 1/4 c. sour cream
Directions

In a large skillet, brown beef over med-high heat. Break up any large pieces with a spoon.

Stir in onion, bell pepper and garlic. Cook, stirring often for 5 minutes.

Stir in paprika and thyme.

Add broth, noodles and peas/carrots. Bring to a boil.

Reduce heat and simmer for 8 to 10 minutes, stirring occasionally until noodles are tender.

Stir in sour cream and simmer uncovered for 2 minutes. Serve immediately
