Hungarian Beef and Noodles

Ingredients

  • 1 lb ground beef
  • 1 md. onion, chopped
  • 1 md. green bell pepper, chopped
  • 1 clove garlic, minced
  • 1 Tbsp paprika
  • 1 tsp dried thyme
  • 3 1/2 c. beef broth
  • 4 c. medium egg noodles
  • 1 (10 oz) pkg frozen peas and carrots
  • 1/4 c. sour cream

Directions

  1. In a large skillet, brown beef over med-high heat. Break up any large pieces with a spoon.

  2. Stir in onion, bell pepper and garlic. Cook, stirring often for 5 minutes.

  3. Stir in paprika and thyme.

  4. Add broth, noodles and peas/carrots. Bring to a boil.

  5. Reduce heat and simmer for 8 to 10 minutes, stirring occasionally until noodles are tender.

  6. Stir in sour cream and simmer uncovered for 2 minutes. Serve immediately
